Ingredients

  • 3 eggs

  • 1/4 cup chopped fresh spinach

  • 1/4 cup sliced mushrooms

  • 2 tablespoons diced onion

  • 1 tablespoon grated Parmesan cheese

  • Salt and pepper to taste

  • Cooking spray or a small amount of butter for the pan

 

Steps


01 In a bowl, whisk the eggs until well beaten - season with salt and pepper.


02 Heat a non-stick skillet over medium heat and coat it with cooking spray or a small amount of butter.


03 Add the diced onion and sliced mushrooms to the skillet, and sauté until the mushrooms are tender.


04 Add the chopped spinach to the skillet and cook for another minute until wilted.


05 Pour the beaten eggs over the vegetables in the skillet.


06 Cook the omelet, gently lifting the edges and tilting the skillet to allow the uncooked egg to flow to the edges.


07 Sprinkle the grated Parmesan cheese over one side of the omelet.


08 Once the eggs are mostly set, fold the omelet in half and cook for an additional minute.


09 Slide the omelet onto a plate and cut it in half before serving.
